I’m not one for planning, especially when it comes to the holidays. But I always look for festive activities and treats for Rowan and me. Halloween is in a couple days, but this treat just takes one quick trip to the store, a microwave, and some silicone baking sheets.
Last Minute Halloween Rice Crispy Treats

We made super easy chocolate-dipped (store-bought) rice crispy treats. Rowan decorated them with candy eyes to make them festive for Halloween, making the treats into monsters! Since I wanted Rowan to be involved, I picked rice crispy treats since they are big. You could do the same thing with marshmallows, Oreos, or anything worth dipping in chocolate. I saw this idea on Pinterest years ago, before I had Rowan. I wish I could link to the original.
Step 1: Shop at the store or your pantry (if you keep random supplies on hand)
For these quick and easy treats, you’ll need:
Rice Crispy Treats (You could also make them if you are about that life)
Melting Chocolates (I bought colored chocolates, but you could also dye white chocolates if needed)
Silicone Baking Mats or Parchment Paper
Step 2: Open up the individually wrapped rice crispy treats
This is not an eco-friendly treat. Sorry, sometimes you gotta do what you gotta do.
Step 3: Lay out the silicone baking mat or parchment paper
Step 4: Melt the chocolate in the microwave
I don’t have a double boiler, but the chocolates were easily melted in the microwave. I did a cup of melting chocolates and a tablespoon of coconut oil, microwaved for 30 seconds, stirred, and another 30 seconds. I repeated the microwave heating and stirring until the chocolate was melted entirely.
Step 5: Get dipping
We dipped the rice crispy treats a few times each in the chocolate. It depends on whether you want a thick or thin layer of chocolate.
Step 6: Give them eyes
When Rowan and I bake cakes or cupcakes, he loves decorating with sprinkles. So, I gave him free rein to place the eyes!
Step 7: Let the chocolate dry
Let the chocolate dry, or don’t, do what you want. After the treats dried, I put sticks in the bottom and wrapped them in treat bags to give to Rowan’s little friends at the park on Halloween. I did let him have one. I mean, Rowan did work hard making these monsters.
Are you making anything special for Halloween?

Quick & easy Halloween treats and even the kids can help make them too. I think you can even design the rice crispies into Frankensteins using the green chocolate.
